Red curry

Ingredients

• 1 onion
• 6 garlic cloves
• grated ginger
• bell pepper
• mushrooms
• eggplant
• basil
• pineapple
• limes
• soy sauce
• fish sauce
• Panang curry paste red
• can coconut milk
• honey
• chili
• chicken (or other meat or no meat)

Instructions

In pan 1:

• saute chicken, onion, garlic, chili

In pan 2:

• saute the veggies

Pan 1:

• add curry paste
• add coconut milk
• 1 tbsp soy sauce
• 2 tbsp fish sauce
• 2 tbsp lime juice
• add honey
• pepper to taste

Finally:

• combine pans and let simmer, season/adjust to taste
