Banana bread
Adapted after Sally's baking recipes.
Ingredients
- 250 g flour
- 150 g brown sugar
- 115 g unsalted butter, softened to room temperature
- 80 g yogurt
- 2 large eggs
- 2 cups mashed bananas (about 4 large ripe bananas)
- 1 teaspoon pure vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- optional: 3/4 cup (100 g) chopped pecans or walnuts
- ton of chocolate chips (or less)
Instructions
- Pre-heat oven to 180 deg C.
- Grease a loaf pan.
- Whisk the flour, baking soda, salt, and cinnamon together in a large bowl.
- Mix butter and brown sugar with a mixer until smooth, about 2 minutes.
- Mix in the eggs.
- Mix in the yogurt, mashed bananas, and vanilla extract.
- Slowly add dry ingredients into the wet ingredients.
- Fold in the nuts.
- Bake for 50 minutes but check after 45 minutes. It should be slightly soft
at the center and not overcooked.
- Loosely cover the cake with aluminum foil after 30 minutes.
