Banana bread

Adapted after Sally's baking recipes.

Ingredients

• 250 g flour
• 150 g brown sugar
• 115 g unsalted butter, softened to room temperature
• 80 g yogurt
• 2 large eggs
• 2 cups mashed bananas (about 4 large ripe bananas)
• 1 teaspoon pure vanilla extract
• 1 teaspoon baking soda
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon salt
• optional: 3/4 cup (100 g) chopped pecans or walnuts
• ton of chocolate chips (or less)

Instructions

• Pre-heat oven to 180 deg C.
• Grease a loaf pan.
• Whisk the flour, baking soda, salt, and cinnamon together in a large bowl.
• Mix butter and brown sugar with a mixer until smooth, about 2 minutes.
• Mix in the eggs.
• Mix in the yogurt, mashed bananas, and vanilla extract.
• Slowly add dry ingredients into the wet ingredients.
• Fold in the nuts.
• Bake for 50 minutes but check after 45 minutes. It should be slightly soft at the center and not overcooked.
• Loosely cover the cake with aluminum foil after 30 minutes.
